"Kobetsuzawa", in what is said to be Sapporo’s last paradice, is located in the center of Sapporo, Hokkaido. In 2014, GRANVISTA Hotels & Resorts opened their own natural cultivation farm named “GRANVISTA FARM SAPPORO.” In commemoration of the 10th anniversary of the opening of the park, our sweepstakes is giving away natural vegetables from our farm for 5 winners from our readers.

01 Natural cultivation started 10 years agoGrowing on our own farm...
"GRANVISTA FARM SAPPORO" is located in a woodland surrounded by nature, about 20 minutes by car from downtown Sapporo. This is a farm established by GRANVISTA Hotels & Resorts in 2014. Since the opening of the park, we have practiced the “Kimura Farming Method,” which does not use any pesticides or fertilizers. Tomatoes, eggplants, green peppers, zucchini, potatoes, and edible hozuki, "Northern Cherry," are cultivated in a field of about 500 square meters. Exactly 10 years ago, Sapporo Park Hotel, which operates "GRANVISTA FARM SAPPORO", has taken on the new challenge under the guidance of Mr. Akira Takagi, an agricultural coordinator who inherited farming methods directly from Akinori Kimura, who is known for the book "Miracle Apple."
Restaurant staff also find time to visit the fields to help with weeding and harvesting. In the first year, there was almost no harvest, which disappointed the staff, but the yield gradually increased from the second year. Now it has become a rich field with plenty of splendid vegetables.
Every summer, the number of customers visiting our restaurant has increased, looking forward to dishes made with vegetables from our own farm.
02 With the smell of the fields and the original taste of natureHospitality
"Vegetables in the olden days were a little irregular in shape, but they had the smell of the fields and the natural flavor. Naturally grown vegetables have that kind of simple, old-fashioned flavor, and that's what makes them so appealing."
So says Ikuo Yoshida, the executive chef of Sapporo Park Hotel who also goes to the fields himself.
“Natural cultivation does not mean that you don’t need to do anything once the seeds are sown. As pesticides and fertilizers are not used, careful management is required with human eyes and hands. If there are weeds, they are pulled out and if plants are weak, they are treated. Naturally grown vegetables are then grown in the fields depending on the year’s weather and soil. Since they are grown by humans and nature, I purposely call them “naturally grown.''”
Even before we opened our own farm, our chefs at Sapporo Park Hotel visited vegetable farmers all over Hokkaido, inspected the ingredients themselves, learned the cultivation methods and the producers' wishes, and used them in our dishes. Even after opening our own farm, we value our relationships with producers who take their products seriously. "It's a great learning experience for young restaurant staff to be able to grow and harvest vegetables with their own hands and see first-hand where the products come from and how much care goes into growing them."
From 2022, we will also be engaged in urban beekeeping on the rooftop of the hotel. Harvested vegetables and collected honey are used in dishes at restaurants and as ingredients for sweets. Sapporo Park Hotel's challenges will continue.
03 Supporting "food" of Sapporo Park HotelCommunicating with producers at marche
In early August, at Sapporo Park Hotel, a market was held where farms practicing natural cultivation in the suburbs of Sapporo and producers who make sweets and other processed products using pesticide-free and organically grown vegetables as raw materials gathered together. Of course, Granvista Farm also opened its store, selling freshly picked vegetables and honey. It was well received by many visitors.
After the marche, Akinori Kimura took to the stage and gave a lecture on natural cultivation followed by “Natural Cultivation Party'' with a greeting from General Manager Yasushi Arakida. A special one-night-only dinner was served for this day, centered on vegetables from Granvista Farm.
This full course meal features vegetables made with naturally grown products. The appetizer was grated okra, the main meat dish was served with seasonal vegetable ratatouille, and the dessert was hozuki compote.
“Naturally grown vegetables may be a little uneven, but if the chefs take some time and effort, they can be arranged neatly. This is something that Sapporo Park Hotel has been working on for many years, and Granvista Farm is an extension of those efforts,” says Executive Chef Yoshida.
There were smiles on every plate from approximately 150 guests in attendance.
“I would be happy if people could feel the richness of Sapporo through our menu,'' executive chef Yoshida, narrows his eyes.
04 Commemorating the 10th anniversary of Granvista Farm5 people will be given a gift package of naturally grown vegetables.
GRANVISTA Hotels & Resorts celebrated its 65th anniversary on August 27, 2023. Granvista's sustainable initiatives have been handed down and developed. Granvista Farm and rooftop urban beekeeping are part of it. The hotel will continue to take on the challenge of various initiatives to realize a sustainable society.

Since opening the farm, we have practiced the Kimura method of cultivation, which does not use any pesticides or fertilizers. New and young employees play a central role in the cultivation and maintenance of the farm.
